In my efforts the past couple of years, I've come up with a couple of great hard-to-mess-it-up meals built around the avocado. This burrito is the first one, and probably the most original.
1 small avocado (or half a large one), chopped or mashed
1/2 cup black beans
Cilantro (to taste-- I like to use a lot)
Salt to taste
1 whole wheat tortilla
2 tablespoons plain Greek yogurt
Directions: Rinse and drain the black beans. Peel and mash up the avocado, combine with salt, cilantro and beans. Spread mix over whole wheat tortilla and heat in the microwave. Add two tablespoons plain Greek yogurt and enjoy.
Calories: About 425 to 500, depending on how much avocado you end up using
I love this dish because it has everything I've learned to build into a smart eating meal. Two forms of lean protein, whole grains, and fruits/vegetables. As an added bonus, the Greek yogurt provides some calcium. (It could use a few more vegetables, so I drink a glass of low sodium V8 along with it, but that seems to cause nasty faces when I mention it to people).
